Hellooooo my long lost blog-loves.
What have I been up to the last two years?? A tonne. But that’s for a later post, so for now I will focus on the more recent past, or rather EASTER WEEKEND. Each year my family and I go camping in the same place, so I have a few eats and scenery pics to share, as well as some other photos from the last couple of weeks.
I’m letting the photos do most of the talking in this post, let’s be honest, because the last three weeks have been mentally and physically exhausting and draining. My manager was on leave, so I was doing her job and mine, which meant lots of overtime and running on pure adrenaline most of the time. Now that she’s back (she returned to work yesterday), I’ve kinda managed to relax a little, so I’m feeling a bit blah tonight. I’m sure tomorrow (Friday) night, once I really get to stop, I’ll just sleep and sleep and sleep (and maybe sleep some more).
That’s not to say that the last few weeks haven’t had their share of good times, though. Because they definitely have:

Well…hello there. It’s strange posting a blog after being so back and forth over the last year or so. A lot has happened, I’ve moved back ‘home’ (to Melbourne), and been between jobs for a while. Now I’m full time working at a place I love, and my life has settled down a little bit, so I thought it was the perfect time to start blogging again!🙂
In the midst of all the craziness that has been my life the past year, my healthy eating habits have been cast aside (mostly), so I am attempting to ‘restart’, and get into a routine, and hope that the rest of my life will start going back to normal again😛
I missed you all.. not that I think I would have any readers left, but whoever is still out there, hello!

I hope you’ve all had a great day. Mine was pretty hectic, so the eats are definitely not too exciting.

First things first, breakfast. I had my usual of peanut butter oats. I was loving them so much today. I needed that fuel for the long day ahead!
Then one of the girls in HR came down to promote the new company donation program, with….CHOCOLATE COINS!!
Best. Morning. Snack. Ever.
For lunch, I had a salad with cous cous and antipasto. It hit the spot after the morning that I had, believe me. My boss left early and my other colleague in my team was on holidays, so the amount of work tripled! I ate lunch at my desk whilst trying to keep on top of things.
My afternoon snack was from the free fruit plate that was brought down from the company briefing breakfast. I haven’t had watermelon for ages, and it was really refreshing🙂
Dinner was consumed after a sweaty personal training session. We worked on arms and abs, and finished off with 500m on the rowing machine. My arms are starting to look more toned, which is really exciting😀

Sooo good. The right mix of coconut milk and spices, and just what I was craving!
Last weekend I bought Season One of Grey’s Anatomy. I’ve watched quite a few episodes of this, but have never sat down and just watched it from the start, so I’m looking forward to getting through the next season!

Q: What are you up to this weekend?
Well, it’s that time of the week again, and you know what that means….
I was super busy training someone in the document management system we use today, so eats were scattered and basically whenever I could get a break! It was one of those days.
Breakfast: Oats with banana whipped in and Natural Peanut butter.
I managed to have my usual breakfast just before the training was about to start. Yes, I am trying to make a smiley face with my peanut butter, and yes, I am a bit crazy.
Lunch: Chickpea-quinoa burgers and salad with balsamic dressing.
I made some delicious Chickpea-quinoa burgers on the weekend, so I’ve been having them in lunches basically all week. Should I post the recipe?😉
Snack: Lindt Dark Chocolate.
It was one of those kind of days. Chocolate was a necessity.
Snack: Mini gingerbread men cookies
I went a bit crazy towards the end of the day, and here is the result. I blame the paint fumes coming from the new gym being installed on the same floor as my desk.
Dinner: Fry’s ‘POPS’ – popcorn ‘chicken’
After a long session at the gym, I came home to make a quick and easy dinner. I saw these POPS in the supermarket freezer section, and decided I ought to give them a try. They’re delicious, and quick and easy to pop in the oven (or convection oven, if you’re like me and oven challenged).
It was a long day, and I’m happy to go to bed and watch some Pretty Little Liars.

Q: Have you had any new food finds lately?
Wooooah. All I can say is that it has been a loooong week, and I’m sorry for the lack of posts! On Monday I was told that I would be in Sydney for the next two days with my boss, holding some document management workshops at one of our projects there. Short notice, right? And I didn’t really get time to photograph anything whilst I was away!
Or eat anything very interesting, because on Sunday afternoon I got my tongue pierced!😛

Favourite meal this week
For the first few days of this week, I couldn’t eat any solid food because of my tongue piercing, so slurpees and smoothies were the best remedy. This fanta slurpee was had on Monday!🙂 Ice is meant to help the tongue swelling – my tongue was GINORMOUS on Monday.
Favourite TV show
I’ve started buying the episodes from Itunes, and I already love Eliza Dushku, so how perfect! This show is so interesting.. I am already hooked. I can’t wait to watch more episodes.
I LOVE philosoraptor memes, so this isn’t really one in particular, but if you haven’t seen them before, GET ONTO IT.
